Quick, Healthy Meal

Marinade boneless, skinless chicken breasts in World Harbors fajita sauce for about 1 hour in the refrigerator. Then bake chicken for 35 - 40 minutes at 375 degrees in the oven. At the 20 minute mark of baking the chicken, add the Alexia Oven Reds potatoes (no trans fats). During the last 5 minutes, steam the Del Monte fresh cut green beans. I was thrilled that everybody in the family liked everything at dinner. There were no leftovers! These products can be found at Mars, SuperFresh and Wegman's. this recipe reminded me of my recipe for chicken/cheese quesadillas... only you coat the boneless/skinless chicken breasts in fajita seasoning; bake until cooked thoroughly; then cut to bite sized pieces and put on a quesadilla shell in a frying pan with Mexican blend shredded cheese and some salsa; cover with another quesadilla shell; the tricky part is turning them over just when everything melts together.
you will probably only use 2-3 chicken breasts, depending on the size of your family... or appetite:)... but the best part... the leftover chicken that's coated with the fajita seasoning, makes AWESOME chicken salad!!
